How do you avoid going broke with AA when your opponent flops a set?

Assuming your heads up going to the flop and out of position, how do you do it?

I have done it many a time guvnorg, but it depends on a lot of things: Opponent, board texture, metagame, being out of position doesn't help matters as well. Also against an unknown, sometimes you just have to let it go without reads.

easy to get away from it playing deep stacked against a tight player with a solid read.

otherwise you can't unless you fold pre flop. :P
